Ukrainian: Marina's Cabbage Salad

(serves 4-6)
Ingredients:
- ½ head white cabbage, shredded
- Salt to taste
- 1 teaspoon sugar
- 1 tablespoon apple cider vinegar
- ½ cup carrots, shredded
- ¼ cup cilantro leaves, chopped
- ¼ cup olive oil
Procedure:
- Shred the cabbage using a mandoline or just cut very thinly
- Add salt and sugar and press the cabbage using both hands.
- Transfer cabbage to mixing bowl
- Add vinegar, carrots, cilantro, olive oil; mix thoroughly
- Adjust seasoning: add more salt (if desired)
